Gluten-Free= EXPENSIVE (but delicious!)
I had a request from a customer to make their wedding cake topper a gluten-free cake, as the groom is sensitive to gluten. Never before have I used or even thought of using gluten-free products. But I was up for the challenge!
I went to researching and found out that gluten-free baked goods are relatively easy to make but require products that are VERY pricey.
Red Mill sells great quality products. They specialize in gluten-free and whole grain baking products. Their all purpose baking flour (like the one I bought) can be used to make cakes, cookies and bread... virtually anything normal all-purpose baking flour can make. A 2 LB. bag will cost you almost $7.00!
The catch to gluten free products is that you MUST use a binding agent. Either xanthan gum or guar gum. These are used to add volume to gluten-free baked goods. This is the pricey part: a 0.5 lb. bag of xanthan gum will cost about $12.00.
I did a price comparison, and Gluten-free products are almost triple the cost of products containing gluten.
Nonetheless, it was worth it, and I know my customers will be very happy with the result. The triple chocolate cake I made turned out DELICIOUS!
YAY for all of our gluten-free friends who can now eat yummy cake too!!
