Mini Baker's Coconut Cream Cupcakes

Putting some left-over coconut flakes to good use...
And Vwa-laa!!
Mini Coconut Cream Cupcakes...
(a fluffy white cake with toasted pecans and shredded coconut flakes, topped off with Coconut Cream Cheese Frosting and toasted shredded coconut on top!)
Minis are perfect because they are just enough to indulge and have 90% less guilt!
The coconut and pecans add just enough crunch!

    Congrats on opening your own baking biz by the way. That is awesome! I am also a young 20 something obsessed with baking so I share your passion!

    I just do my thing from home part-time right now while I am finishing up college. But a bakery... what a dream! You are doing great, keep it up!
