Mountain Berry Pie

Hope all of you had a great Thanksgiving! We all have lots to be thankful for,
I know I do! My Thanksgiving was spent with my boyfriend's family and a bunch of their friends. It was filled with great food, awesome family (and new friendly faces), games, and DESSERT!
I was in charge of dessert (with the exception of the pumpkin pie, which my boyfriend's Mom, Sharon, baked... it was perfect!)
The desserts I made were:
Apple Crumble Pie, Cinnamon Swirl Bundt Cake and Mountain Berry Pie!
The Mountain Berry Pie was inspired by a trip to Julian, where I indulged in the most magical mixed berry pie I have ever tasted! Mine came close, but was a more TART version of the Julian delicious-ness. Its always nice to mix up traditional with non-traditional desserts, and the Mountain Berry Pie was just the thing!
Mountain Berry Pie
  • INGREDIENTS
  • 1 cup fresh raspberries
  • 3/4 cup white sugar
  • 3 tablespoons cornstarch
  • 1 cup fresh blueberries
  • 1 cup fresh boysenberries
  • 1/2 cup chopped granny smith apples
  • 1 recipe pastry for a 9 inch double crust pie
DIRECTIONS
  1. In a large mixing bowl, stir together sugar and cornstarch. Add boysenberries, raspberries, apples and blueberries; gently toss until berries are coated. (When using frozen fruit allow fruit mixture to stand for 15 to 30 minutes, or until fruit is partially thawed).
  2. Line a 9 inch pie plate with half of the pastry. Stir berry mixture, and transfer to the crust lined pie plate. Top with second crust, and seal and crimp the edge. To prevent overbrowning, cover the edge of the pie with foil.
  3. Bake at 375 degrees F (190 degrees C) for 25 minutes when using fresh fruit, 50 minutes for frozen fruit. Remove foil. Bake for an additional 20 to 30 minutes, or until the top is golden. Cool on a wire rack.
  4. We accompanied the pie with home-made cinnamon ice-cream! YUMMM!

  3. I like the mix-up with the boysenberries! Not only is that a fun word to say (especially after some Thanksgiving wine), but it's a cool way to change up the pie. Sounds like you had a great one :)
