Moist Banana Bread

Ok ladies (and gentlemen!) you have GOT to try this recipe. This is literally the most moist, fluffy, banana-ey, and best of all SIMPLE banana bread recipe ever! It comes to you courtesy of Sharon Pfrang, my boyfriend's mother. She too shares my love of baking... and I wish we lived closer so we could continue our monthly "bake-offs."



I like to make a big loaf and a mini... that way I can freeze the large one and eat the mini, and feel guilt free! Although, this time I decided on all mini's... to give away to the Grandmas :)

ENJOY!

INGREDIENTS:
1/2 cup oil
1 1/2 cups sugar
2 eggs
4 tbs buttermilk
3-4 bananas, ripe
2 cups flour
1 tsp baking soda

DIRECTIONS:
Cream the oil and sugar together. Next, mash the bananas and add to sugar and oil. Add buttermilk and eggs to the sugar mixture. Mix flour and soda together and add to sugar/banana m
ixture.
Pour into loaf pan sprayed with pam and dusted with flour.
Bake at 375 about 55 minutes or until done in center, or about 45 minutes for the minis.

  1. I simply love banana bread. There is this banana cake that I have been baking for a while with satisfactory result and always thought I should bake a bread version of it.

  4. Ooh, we love banana bread here. My kids will "accidentally" leave the last few on the bunch so I have to make it and use them up...sneaky kids.

  14. I love banana bread. I make it often, we seem to always have a few dark bananas around here. I love to throw walnuts in mine. My recipe doesn't use buttermilk, I'll have to try yours!
