Mini Cookie Dough Cheesecakes

Mini Cookie Dough Cheesecakes


One of the main reasons I love MINI things is because they make you feel less guilty when indulging in a crazy, decadent dessert! And have two or three mini cheesecakes TOTALLY isn't as bad as eating a normal-sized piece of cheesecake... right? RIGHT! :)
These are heaven! Literally.






  • Mini Cookie Dough Cheesecakes
  • Chocolate Chip Cookie Crust
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 egg yolk
  • 2 cups semisweet chocolate chips


Directions

  1. Preheat the oven to 325 degrees F (165 degrees C). Line cupcake pans with 24 liners.
  2. Sift together the flour, baking soda and salt; set aside.
  3. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Drop a rounded TBSP of dough into each of the cupcake liners and gently push to flatten the dough within the liner. Bake for 12 minutes. Take the cookie "crusts" out when they still look slightly gooey in the middle (the will finish baking with the cheesecake on top).

Cheesecake Filling

  • 2 (8 ounce) packages cream cheese
  • 3/4 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy. Fill each cupcake liner with this mixture, almost to the top.
  3. Bake for 15 minutes. Cool. Top with a teaspoonful of cherry pie filling, or drizzle with dark chocolate.

  17. These look amazing! My best friend L O V E S cheesecakes and cookies so perfect combination! She bakes an awesome carrot cake which she mailed me to the states, since I won't be seeing her 'till Christmas and I was looking for something to make for her as a thank you!
