These cookies make me think of my Grandpa. My Poppa Ted used to say that these reminded him of the ginger cookies he ate as a boy growing up in Denmark years ago. My mom found this recipe years ago in some junk mail. So, I guess it does pay to look through the junk mail sometimes. Merry Christmas!

Anna’s Almost Danish
Ginger Cookies
1 cup butter
1 ½ cups sugar
1 egg
1 ½ Tbsp. grated orange rind
2 Tbsp. dark corn syrup
1 Tbsp. water
3 14 cups flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. ginger
½ tsp. ground cloves
Few grains of salt…just a touch
Cream butter and sugar together. Add egg and beat together. Add orange rind, corn syrup, water and mix well.
Sift dry ingredients together and stir into creamed mixture. Chill well. Roll out onto cutting board to 1/8” thickness and cut with cookie cutters. (I like to use hearts for this recipe.) Place one inch apart on a greased cookie sheet. Be sure to leave space between the cookies as they will spread. Bake the cookies at 350 degrees for 8 -10 minutes, or until nicely browned. Makes about 8 dozen cookies.
I have to love a recipe that reminds the baker of their loved ones. Great job.

ReplyDeleteMy mom and I made these along with all of our other Chistmas cookies. She told me that when she was a kid, she would put gingersnaps in her palm, make a wish, then try to break the cookie in her palm. If it broke into 3 pieces, she got her wish!
