Chocolate Truffle Pie
Happy Valentine's Day to all you love birds out there! Its the one day out of the entire year that more chocolate and candies are sold. Why not make your sweetie (or yourself... because you're definitely worthy of this delightful dessert) a CHOCOLATE TRUFFLE PIE.
This pie is not only beautiful in presentation, it literally taste like a giant Godiva Dark Chocolate Truffle- minus the chocolate shell and plus a Oreo cookie crust.
The strangest thing about the pie happens to also be the most awesome thing about this pie: only 1/4 cup sugar in the entire thing!! aka LO-CARB!! Any dessert that has that little sugar makes me feel so much less guilty (even if there is 240 grams of fat per serving).

Chocolate Truffle Pie

INGREDIENTS:
- 12 ounces semisweet chocolate chips
- 1 1/2 cups heavy whipping cream
- 1/4 cup sifted confectioners' sugar
- 1 tablespoon vanilla extract
- 1 (9 inch) prepared chocolate cookie crumb crust
DIRECTIONS:
- In microwave dish combine chocolate chips and 1/2 of the cream. Cook on high for 1 to 2 minutes, stirring every 30 seconds until smooth. Cool to room temperature. Stir in sugar & vanilla. Set aside.
- In small bowl, beat the rest of the cream until soft peaks form. Beat in chocolate mixture on high speed 1/3 at a time. mix well and spoon into crust.
- Refrigerate at least 8 hours before serving.
That looks so good! I guess we just won't count the sugar in the chips or the crust, right?
