Baked Cheesy Garlic Potato Chips

Pringles, Cheez-its, Cheetos, Doritos... they all have that amazing crunch we can't exist. If you're like me, you'll go to the limits to add some crunch to your life.


I have a soft spot for chips, luckily my husband does not so it prevents me from buying every single 2/$5 chip deal in the market. I love crunch so much I even purposefully burn my toast, bagels and yes, even waffles

These are a perfect snack or side dish for that person who loves crunch, but wants to be somewhat healthy. (And by healthy, I use that term loosely). These Cheesy Garlic Potato Chips are *baked* not fried, but still provide that great CRUNCH! Enjoy!


Baked Cheesy Garlic Potato Chips
(serves 4)
INGREDIENTS:
4 medium Red Potatoes
sea salt for seasoning
1 clove garlic, minced
2 tablespoon olive oil
3/4 cup low-fat cheddar-jack cheese

DIRECTIONS:
1. Preheat oven to 400 degrees F.
2. Combine the olive oil and minced garlic in a small bowl. Let it set for 30 minutes, so the oil absorbs the flavor of the garlic.
3. Slice the potatoes as thin as possible with a mandolin or very sharp knife.
4. Put the potato slices and olive oil mixture in a large Ziploc bake and toss to coat the potato slices evenly.
5. Line a baking sheet with parchment paper and spray lightly with cooking spray. Spread out potato slices onto the baking sheet in a single layer. Sprinkle sea salt over potatoes.
6. Bake for 15-20 minutes till potatoes start turning golden brown. Remove from oven and sprinkle with 3/4 cup low-fat cheese. Bake for another 3-5 minutes or until the cheese is completely melted. Remove from oven, and let them cool slightly before eating.
