Mango Pineapple Salsa


The time has changed, which means more sun... more drinks... and more summer FOOD! 


This Mango Pineapple Salsa has summer written all over it. I love everything about summer food. Summer flavors are always so fresh and the colors so bright. This salsa has both of those qualities, along with spice, crunch & sweetness! 


My family and I enjoyed this salsa with a large bowl of chips & a few margaritas, but it would also be delicious on an Ahi steak ... or how about some fried fish tacos- YUM!



Mango Pineapple Salsa
(Makes 16 servings)
INGREDIENTS:
1 purple onion, diced
1 large red or green bell pepper, seeded and diced

3 to 4 large jalapenos, seeded and finely diced

6 to 8 firm Roma tomatoes, de-seeded and diced

3 limes

2-3 ripe (but not mushy) mangos, diced

1/2 cup fresh pineapple, diced

1 cup chopped cilantro

2 teaspoons chili powder

1 Tablespoon garlic powder

1 Tablespoon ground pepper

2 teaspoons sea salt

DIRECTIONS:
1. In a large bowl, mix together the onion, bell pepper, jalapenos and tomatoes. 

2. Squeeze all the juice of the three limes over the chopped veggies.

3. Add remaining ingredients and mix well using a large wooden spoon. Be sure not to over-mix or the mango will bruise & turn color.

4. Enjoy with a margarita & lots of chips!
