Snickerdoodle Ice Cream Sandwiches



Ok friends... the title may sound weird,  this combination of Snickerdoodle cookies with Cookies & Cream Ice cream may sound even weirder. But the chewy, light cinnamon-sugar flavor of the Snickerdoodles taste DIVINE with my homemade Cookies & Cream Ice cream. and vwa-laa: Snickerdoodle Ice Cream Sandwiches are born!
Michel ate his fair share yesterday and I (the one who normally has amazing self-control) just HAD to have seconds as well.


Give this recipe a try... you won't be disappointed!


Snickerdoodle Ice Cream Sandwiches
Snickerdoodle Cookies
(makes 24 cookies)


INGREDIENTS:
1 cup butter (softened)
1 1/2 cups sugar
2 large eggs
2 3/4 cup flour
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
3 TBSP. sugar
3 TBSP. cinnamon


DIRECTIONS:
1. Cream butter & sugar together, until light and fluffy.
2. Next had the two large eggs, mix until well combined.
3. Next had the flour, cream of tartar, baking soda and salt to the butter mixture. Mix just until combined (do not over mix, this will make your cookies tough!)
4. Chill the dough in the refrigerator for 20 minutes, meanwhile, mix the sugar and cinnamon together.
5. Take 1 inch dough balls (of the cold dough) and coat with the cinnamon mixture.
6. Place you ball 2 inches apart on an un-greased cookie sheet.
7. Bake at 350 for 10-12 minutes. Remove immediately from the cookie sheet, and let the cookies cool on a wire rack. 


Mini Baker Home-made Cookies & Cream Ice-Cream
(makes 1 pint)
INGREDIENTS:
2 eggs
3/4 cup sugar
2 tsp. of vanilla
2 cups cream
1 cup milk
15 Oreos (or 30 mini Oreos)


1. Set up your ice-cream maker, according to directions. (I LOVE my Cuisinart Ice-cream maker... so if you don't recommend one, I highly recommend this brand!)
2. Beat the eggs in a large, cold glass bowl, until the eggs are light and fluffy.
3. Add the sugar and vanilla to the eggs and mix well.
4. Next, whisk in the cream and milk.
5. Pour the cream mixture into your ice-cream maker and blend for 20 minutes.
6. Meanwhile, roughly chop 10 of your Oreos and put the remaining five in a food processor to make Oreo crumbs.


7. Once the ice-cream has thickened, pour the Oreo chunks and crumbs into the ice-cream. Continue to blend for 5 more minutes.
8. After the ice-cream is done, put it immediately into the freezer for an additional 2 hours. 
9. After two hours have passed, you can finally reward yourself by assembling a nice, fat Snicker-cream Sanny!! Yay!
