Banana Cupcakes with Cinnamon Honey Butter Cream Frosting!

Bananas are pretty much a miracle fruit, when it comes to baking. You put a banana into anything that is baked and its instantly moist for days! THIS is why I LOVE banana bread, banana cookies, and now... banana cupcakes.
These cupcakes aren't heavy like banana bread. They are light, fluffy and ultra moist. The honey and cinnamon in the frosting add a nice zip!

Banana Cupcakes with Cinnamon Honey Butter Cream

Ingredients
1/2 cup butter
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cup mashed ripe bananas
1/4 cup buttermilk
2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt

FROSTING:
1/2 cup butter or margarine, softened
2 1/2 cups confectioners' sugar
3 TBSP. honey
1 tsp. cinnamon

Directions
1. In a large mixing bowl, cream butter and sugar.
2. Add the eggs, vanilla, bananas and buttermilk.
3. Sift the flour, baking powder, baking soda and salt; add to banana mixture. Fill 18 paper-lined muffin cups two-thirds full.
4. Bake at 350 degrees F for 15-20 minutes or until a toothpick comes out clean. Remove to wire racks to cool completely.
5. In a small mixing bowl, cream the butter, sugar, honey and cinnamon. Frost your cupcakes (I used a French decorating tip). Enjoy!

  2. I'm not a huge fan of banana on its own but I have to agree that in baked goods it does work miracles. I bet this cupcake tastes incredible.
