Apples & Cheese. I discovered my love for this combo at The Melting Pot. There's something about warm rich cheese with cool, tart apples that is SO delicious.
This sandwich is both beautiful & simple to make. It would go great with a glass of wine or a bowl of homemade soup- or both!
The key to any great sandwich is to have good quality cheese & bread. One day I will make my own home-made Sourdough Bread, but until then I rely on my local market to get my fresh loafs of bread.

Grilled Gorgonzola & Apple on Sourdough Bread
(makes 4 sandwiches)
INGREDIENTS:
½ granny smith apple, cored but unpeeled, very thinly sliced
½ teaspoon fresh lemon juice
8 crusty sourdough bread slices (3/8-1/2” thick)
8 ounces creamy blue cheese, such as gorgonzola, thickly sliced
4 tablespoons chopped pecans
4 tablespoons unsalted butter, melted plus more if needed
DIRECTIONS:
1. Toss apple slices with lemon juice in medium non-reactive bowl.
2. For each sandwich, place about 1/4 of the cheese on one slice of bread. Sprinkle with 1 tablespoon chopped pecans and press down with your fingers. Add 3-4 apple slices, and cover with another bread slice.
3. Brush both sides of the sandwich with a tablespoon or more of melted butter. Repeat to make 3 more sandwiches.
4. Pour a small amount of olive oil into a large skillet. Place the sandwiches, 2 at a time into the the skillet.
5. Grill the sandwiches for 2-3 minutes on each side, or until desired crispiness. Wrap the two sandwiches in foil to keep them hot. Repeat the grilling process on the other two sandwiches.
6. Cut in half and serve warm. Enjoy!

ReplyDeleteYep apple and cheese are soulmates. I'm making a similar sandwich for dinner tonight with white cheddar and apples. Can't wait for so much deliciousness.
