Buttermilk MINI Blueberry Muffins




I woke up this morning feeling like it was a *mini* muffin kind of a morning! I decided on a Buttermilk Blueberry Muffin recipe I found on Recipzaar, but changed it up quite a bit. Its my new FAVORITE blueberry muffin recipe: moist, fluffy muffins and a little "healthier" with egg whites & oil instead of butter!

So here's my recipe!



INGREDIENTS:

2 1/2 cups flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

3/4 cup sugar

1/4 teaspoon salt

egg whites, beaten

1 cup buttermilk

1/2 cup vegetable oil

1 1/2 cups mini blueberries

1 teaspoon vanilla (optional)

Crumb Topping:
2 TBSP. melted butter
1 tsp. cinnamon
3 TBSP. all-purpose flour
1/3 cup brown sugar (or white sugar)

DIRECTIONS
1. Sift dry ingredients together in a large bowl. In another bowl, whisk eggs, buttermilk and oil.
2. Make a well in dry ingredients and pour in liquid ingredients, mixing quickly.
3. Fold in blueberries.
4. Spoon batter into greased muffin cups
4. Mix the melted butter, cinnamon, flour and brown sugar together and sprinkle a teaspoon on top of each muffin and bake till golden brown.
5. Bake at 400 F for 20 -30 minutes for big muffins, or 11-13 minutes for minis. Makes 36-40 mini muffins.

  2. Nice. I've been wanting a mini muffin pan, but I don't have so much room in my kitchen that I can justify more specialty cookware. Sigh.
